Old Vine Reserve Cabernet Sauvignon

Seville Estate Old Vine Reserve Cabernet Sauvignon, produced in tiny quantities, is handpicked from estate vines grown in the cooler southern part of the Yarra Valley.

The fruit is destemmed and moved to open stainless steel vats for 100% whole berry fermentation. The ferment starts with wild yeast and sees daily hand plunging. Malolactic fermentation occurs simultaneously.

The wine is pressed off skins and run to new and seasoned French oak barrels. After ageing for 12 months it is racked to bottle with no fining or filtration.

Dark red, Seville Estate Old Vine Reserve Cabernet Sauvignon is a beautiful cool climate Cabernet with dark fruits, sweet spice and dusty tannins. Cellaring potential is 15 years.
